Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 3 garlic cloves, sliced thin
- 1 medium onion, chopped
- 2 cups boiled potatoes, cut into small cubes
- 1/3 cup green pitted olives, chopped
- 3 tablespoons red vinegar
- 1/2 cup parsley, chopped
- Salt and black pepper to taste
Directions
- In a heavy bottom pan cook the meat without oil.
- Stir well while the meat releases its liquid and starts to fry.
- Add oil and garlic and cook for 3 min. Add onion and cook it until translucent.
- Add the cubed potatoes, mix well.
- Add olives and oil, cook for 2 min. Salt and pepper to taste.
- Turn off the heat and add parsley.
- Wait until it cools before using.
