Meat Filling for Brazilian Pastel

Ingredients

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 3 garlic cloves, sliced thin
  • 1 medium onion, chopped
  • 2 cups boiled potatoes, cut into small cubes
  • 1/3 cup green pitted olives, chopped
  • 3 tablespoons red vinegar
  • 1/2 cup parsley, chopped
  • Salt and black pepper to taste

 

Directions

 

  1. In a heavy bottom pan cook the meat without oil.
  2. Stir well while the meat releases its liquid and starts to fry.
  3. Add oil and garlic and cook for 3 min. Add onion and cook it until translucent.
  4. Add the cubed potatoes, mix well.
  5. Add olives and oil, cook for 2 min. Salt and pepper to taste.
  6. Turn off the heat and add parsley.
  7. Wait until it cools before using.
